Chocolate Chip Cookie

These healthy Chocolate chip cookies were all I could think about. Because, hey, maybe I should share this recipe with all of you. I believe I have eaten too many chocolate chip cookies. But, hey, hey, good chocolate chip cookies are worth it.


The ideal chocolate chip cookie should be firm, chewy, and crispy at the same time. It should even have the right amount of dark chocolate chips. These are low in fat, sugar, and calories and are stuffed with whole grain. They can also be made with no butter or eggs in the recipe. These are so good that they’ll become your new favorites. They’re also safe and affirming and therefore the perfect balance of healthy and chewy.


To make healthy cookies more nutritious, there are some things to think about.

  • When it comes to baking, always check to see if there is an option to swap refined flour for whole grain or unrefined flour.

  • If a recipe imply sugar, use a natural unrefined sugar instead. This option is usually better for your glucose levels and might lower cravings.

  • The dairy products in our diets can cause inflammation and worsen the digestive health of individuals with dairy allergies. Instead of butter, try coconut oil.


Healthy Chocolate Cookies


Ingredients ( Recipe 1 )

  • Peanut butter

  • Coconut sugar or light brown sugar.

  • Vanilla extract

  • Cocoa powder.

  • Egg.

  • Salt and baking soda

  • Dark chocolate chips


Directions

  1. Add peanut butter, coconut sugar, and vanilla to a large bowl. Mix until smooth and creamy.

  2. Stir together cocoa powder, salt, and baking soda in a separate bowl.

  3. Combine the wet and dry ingredients. Mix until combined.

  4. Add in the egg and stir until combined.

  5. Add in the chocolate chips. Stir until combined.

  6. Using a tablespoon measuring spoon, measure cookie dough balls, roll them, flatten, and bake.

  7. Add a few chocolate chips on top of the finished cookies and a sprinkle of sea salt if desired.


Ingredients ( Recipe 2 )

  • 1 1/2 cups oat flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup light brown sugar

  • 1 egg

  • 1/4 cup coconut oil, liquid

  • 2 tablespoons of butter, room temp

  • 1/4 cup baking dark chocolate chips

Instructions

  1. In a bowl, mix the flour, baking powder, salt, and sugar. In another bowl, whisk the egg, and add in the coconut oil and butter.

  2. Using a hand whisk, whisk for 1-2 minutes or until ingredients are evenly distributed. It should look like a thick, curd-like liquid mixture.

  3. Slowly whisk in the dry ingredients into the wet bowl, mixing in the ingredients together well as your pour in the dry. You can also use a small spoon to mix ingredients together. Once you have a consistent dough-like texture, fold in 1/4 cup of chocolate chips with a spatula.

  4. Fold a few times so the chocolate chips get evenly distributed.

  5. Place into the fridge for 1 hour.

  6. Preheat the oven to 370F.

  7. Using an ice cream scoop, pack the dough 3/4ths of the way tightly into the scoop, flatten out the dough onto the opening, and release onto a parchment lined baking sheet. Press the remaining 2 tablespoons of chocolate chips into the tops of each dough ball.

  8. Bake for 10 minutes.

  9. Allow to cool for 7-10 minutes and enjoy!
