Potato Salad with Roast Beef

About the Recipe

Potato salad but make it healthy with lean protein and zero mayo


  • 1 1/4 lbs sliced roast beef

  • 1 1/4 lbs potatoes

  • 4 apples

  • 1/2 lb radishes

  • 2 cup mixed salad

  • 2 tbsp olive oil

  • 1 tbsp dijon mustard

  • 4 tbsp lemon juice

  • 1 tsp salt

  • 1/3 tsp ground black pepper


Boil the potatoes in salted water until done, about 20 minutes. Cut the potatoes in half then cut the apples and radishes into smaller pieces.

In a small bowl, mix the olive oil, mustard, lemon juice, salt, and pepper. Then add the potatoes, apples, and radishes to a larger bowl and pour the mixture on top. Toss it all together and serve with roast beef.
